From Goose Liver to Salted Crispy Chicken

  Seven months ago, French Chef, Christopher Wehrung arrived in Kaohsiung after being invited to work in a traditional French restaurant at the Splendor Hotel. Christopher's experience in Kaohsiung has been a special one; not only for the fact that this trip marks his first visit to an Asian country, but also the fine weather and friendly citizens make Christopher feel that Kaohsiung is a lovely city.
  Although Christopher's busy work schedule has prevented him from doing any decent sightseeing, he admits that his favorite places include the British Consulate at Takao and the romantic Love River. Furthermore, he enjoys trying different food at the various night markets, in particular, "peppery salted crispy chicken" and tasty "hot pot". Christopher said, the most attractive aspect of the night market is it's uniqueness in respect to the delicious snacks it provides, as well as the wide variety of goods on offer, not to mention the fact that night markets aren't found in France.

  Christopher usually catches a taxi when he goes out in Kaohsiung, and suggested that the Kaohsiung City Government could educate taxi drivers to speak English; "if taxi drivers could speak English, it would be easier for foreigner's to explain where they wanted to go. Furthermore, Christopher also suggested that the City Government set up more "Tourist Information Centers" which would make traveling around Kaohsiung more convenient.

  Finally, this young and successful Chef recommended two dishes from his menu; firstly, the "Combined Duck Liver & Goose Liver" and secondly, the "Pan-fried Goose Liver on Mango Compote with Glazed Balsamico". Christopher feels that Taiwanese people like their food salty with a bit of a sweet taste, and therefore, each dish on his menu is specially designed for Taiwanese customers. Be sure to try one of his dishes when you visit his restaurant next time!

  法籍主廚Christopher,約半年前被調派至高雄金典酒店的傳統法式餐廳任職。第一次來到亞洲的Christopher對高雄的印象很好,覺得高雄的氣候宜人,親切又友善的高雄市民也讓他感到高雄真是一個令人喜愛的城市。
  因為來的時間還不是很長,而且也才剛上任新工作,Christopher表示自己沒有太多時間可以到處看看。目前,Christopher主廚最喜歡的地方包括了臨近西子灣的前清英國領事館,以及最浪漫的愛河。除此之外,熱愛美食的Christopher相當喜歡「台灣夜市小吃」,尤其是味道濃郁的「?酥雞」和美味可口的「火鍋」。Christopher還說,夜市是一個很吸引人的地方,不僅有許多好吃的小吃,還有多樣的雜貨可買,是在法國家鄉看不到的。

  出門大多仰賴計程車的Christopher建議,為便利更多的外籍觀光客,高雄市政府可以倡導及教育計程車司機學習說英文。這樣一來,不只可以減少「雞同鴨講」的窘局,還能促進國民外交呢!另外,Christopher還建議政府能多設「旅遊資訊站」,讓外來的訪客可以更放心地享受遊走高雄的樂趣。

  最後,這位年青有為的主廚推薦了兩道佳餚,一道是「鵝肝醬佐白酒悶鴨肝」,另一道是「煎鵝肝佐香芒老酢汁」。Christopher表示,台灣人飲食偏愛鹹中帶甜,菜單上的每一道菜餚都是為台灣饕客們特別設計的。想品嚐法式料理時,不彷試試這兩道!
